1. Preheat the oven to 175⁰C.
2. In a mixing bowl, combine the sugar, flour, baking soda, and salt.
3. Add the mayonnaise, vanilla extract, and chocolate chips.
4. Mix everything together very well.
5. Shape the dough into 45g balls (note: the dough will be crumbly).
6. Gently mash the balls with a fork and sprinkle with sugar.
7. Bake in the preheated oven for 12 minutes.
8. Allow the cookies to cool then store in an airtight container.
